I found a blueberry muffin recipe that I completely altered and ended up with this delicious healthy banana chocolate chip muffin recipe. You can make it sweeter or less sweet depending on your tastebuds.
I was so excited to share with my family and they all loved it! My teen nephew is in town and he prefers “regular” desserts and he approved of this recipe. My husband has a cooking talent and I tell him he could become a chef but he prefers his safer engineer career. He also loved the healthy banana chocolate chip muffins! I’m so happy I finally got him on Instagram to share his love for cooking. He is a phenomenal cook and teaches me the way around cooking gadgets I can’t pronounce and had never seen before. Funny story I used to only own one knife when we met! LOL
Healthy Banana Chocolate Chip Muffins
The skull mold is from Nordic Ware found at Sur La Table. I’m in love with this store! They have the best cooking gadget finds and the best holiday molds for ice and baking! They also have a cooking class that I plan to take.
My mom has just shared a new healthy champurrado recipe with me that I can’t wait to try. I’m Mexican American and I have to say Mexican food is my favorite but it isn’t always the healthiest! I’m also listening to a book Eat To Beat Depression and Anxiety by Drew Ramsey, MD to find better ingredient options for the foods I make for my family.
Growing up I was raised in a Spanish kitchen so bare with me while I learn English cooking terms.
Ingredients
⅔ cups oat flour
½ cup milk of choice (I used oat milk)
¼ cup Swerve Sugar
1 medium banana
1 egg
½ teaspoon coconut oil
¼ teaspoon baking powder
Directions
Add all dry ingredients and then the rest of the ingredients. Mix well and spray your pan of choice. Bake in the oven at 350 F for 20-25 minutes depending on the size of the muffin molds you used. My skull mold made 5.
