Preheat oven to 400 degrees F.
Place squash, apple, and onion on baking sheet.
Drizzle with olive oil, season with salt and pepper, toss to combine.
Roast in the oven 40 minutes.
Bring the chicken broth, garlic, bay leaves, and thyme to a boil in a pot.
Add butterhnut squash, apple, and onion and simmer for 20 minutes.
Remove from the heatand remove bay leaves.
Use an immersion blender or transfer to a blender. Blend until smooth and creamy.
Season with additional salt and pepper to taste. Optional: garnish with bacon bits. Serve and enjoy!
