Butternut Squash Soup

This recipe is a delicious and easy-to-make soup packed with nutrients for hair and skin.

Ingredients
  

  • 2 apples peeled, cores, cut into sixths
  • 1/2 medium yellow onion cut into sixths
  • 1 garlic clove
  • 1 tsp thyme
  • 2 bay leaves
  • 1 tsp salt
  • 1 tsp pepper
  • 5 cups chicken broth
  • 2 tbsp olive oil
  • 2 lbs butternut squash peeled, cut into cubes, about 4 cups

Instructions
 

  • Preheat oven to 400 degrees F.
  • Place squash, apple, and onion on baking sheet.
  • Drizzle with olive oil, season with salt and pepper, toss to combine.
  • Roast in the oven 40 minutes.
  • Bring the chicken broth, garlic, bay leaves, and thyme to a boil in a pot.
  • Add butterhnut squash, apple, and onion and simmer for 20 minutes.
  • Remove from the heatand remove bay leaves.
  • Use an immersion blender or transfer to a blender. Blend until smooth and creamy.
  • Season with additional salt and pepper to taste. Optional: garnish with bacon bits. Serve and enjoy!
