This is my 2 year postpartum health journey progress. I love trying new healthy recipes that keep me full to stay on track of my goals.
1/4 cup pumpkin puree 6 tbsp oat flour 2 tbsp sweetener of choice 1/2 tsp baking powder 1/8 tsp salt 1/2 tsp pumpkin spice mix 1 tbsp oil,butter, or additional pumpkin The recipe makes 2 servings, 125 calories per serving
In a bowl mix in pumpkin, and your oat flour. (You can use spelt, or almond flour if you prefer.)
MIX
Add sugar, baking powder, pumpkin spice mix.
Mix it well and spray a container of choice to microwave the batter for 90 seconds. Start with 60 seconds and add in increments.
I prefer splitting the serving in 2 for snacks. It can also be a filling breakfast as one serving. Enjoy!
